• 1 green papaya, peeled and sliced
• sliced mushrooms
• 1 onion, chopped
• 2 cloves garlic, minced
• Cherry tomatoes
• 1 tablespoon grated ginger
• 2 tablespoons vegetable oil
• Salt and pepper to taste
• Pinch of paprika
• Chopped fresh cilantro for garnish
Method
• Heat the vegetable oil in a wok or large frying pan over medium-high heat. Add papaya and sauté until brown Add the garlic and ginger and sauté for about 1 minute until fragrant.
• Add the onion and stir-fry for 2-3 minutes until it becomes soft and translucent.
• Add the sliced mushrooms and continue to stir-fry for 3-4 minutes until the mushrooms are cooked through and slightly browned.
• Add the tomatoes to the papaya and mushroom stir-fry for an additional 2-3 minutes until the vegetables are cooked but still slightly crisp.
• Season with salt and pepper to taste.
• Garnish with chopped fresh cilantro and serve immediately over rice or noodles or have on its own.
